Vineyard: Located just outside Heywood in Victoria’s South West, Cobboboonee Vineyard was planted in 1990 by Alistair and Alice Taylor. A picturesque vineyard that has been expertly managed for 30 years to produce some of the countries best cool climate Chardonnay, Pinot Noir and Pinot Meunier. An introduction and brief meeting in 2014 led to a wine produced for a wedding and from there a string of amazing Chardonnay vintages under the wine name of Jackson Brooke Henty Chardonnay.

Harvest Date: 25th of March 2021
Winemaking: Pressed directly in old French oak Puncheon for fermentation, without any added yeast. A steady ferment with naturally cooler temperatures which lasted well into April before completion. Full MLF completed by July and then an addition of S02 to protect from oxidation and spoilage. Bottled directly from the barrel 24th of November without fining or filtration.
