Vineyard: Located on a cattle farm near Penshurst in the East of the Henty Wine region, this is another small vineyard. It consists of roughly 500 Chardonnay vines planted on a gentle North facing aspect with a large water body at the bottom of the paddock. An introduction to the owners in 2015 resulted in small batches of wine for the years since, with some new plantings finally coming on this year the volume of wine produced presented an opportunity for a commercial bottling.
Harvest Date: 27th March 2021
Winemaking: Fermented in old French oak barrels without inoculation. Fermentation was fast and clean with a healthy population of wild yeast present in the winery. It was over in 7 days. Full MLF was complete by July where an addition of SO2 was made to prevent oxidation and spoilage. The wine was racked on November 13th and bottled on December 9th via gravity, without fining or filtration.
